Strawberry Dry Gin
Strawberries in the Swan valley are a local delicacy and arrive in October and last until February. The rich flavours can be captured but it requires a lot of effort to slice and distill separately to produce a separate strawberry essence to add after distillation. Martin reduces the juniper and coriander content so as not to swamp the beautiful berry flavours. The aim is to let the berries do the talking.
Subtle aromas of strawberry are combined with some delicate spices. A Gin to be mixed than drink on its own. Garnish with some fresh strawberry in season and add over ice with Angostura bark tonic. A summer treat.
